With a refreshing a mild taste, this widely cultivated vegetable appeals to the pickiest eaters.  The Japanese version is skinnier, with smaller seeds and thinner skin.  It is also sweeter, and its inner flesh is crunchy, tender, and succulent simultaneously. With It is high in vitamin K, and contains vitamin C, magnesium, potassium, manganese, vitamin A, riboflavin, and calcium. It has valuable antioxidant, anti-inflammatory, and anti-cancer benefits, and it provides excellent hydration, and has cooling and soothing effect on the skin when applied topically.  Cucumbers are best eaten raw as part of salad or garnish, but it is also popular in soups, stews, juiced, and pickled.
