Baby Kangkung Water Spinach

Growing in water and moist soil, Kangkung is a humble yet nutritious vegetable cultivated in tropical Southeast Asia. This baby version is younger and tenderer. It is packed in vitamin A, vitamin B, vitamin C, vitamin E, and has phosphorus, potassium, magnesium, iron, fiber, selenium, amino acids, zinc, calcium, and polyphenol (an antioxidant). Upon eating, it treats diabetes (also in pregnancy), facilitates breastfeeding, gives a relaxing effect that helps with insomnia, detoxifies our body, increases immunity, and maintains healthy eye vision. Its crispy stalks are best highlighted when stir fried, but is also commonly served in soups, steamed, or boiled on top of noodles.
