Sunria Mango Rice Pudding
What a way to finish your meal! This rice pudding is delightfully light, and bursting with tropical flavors to give you a feeling that you are in a paradise. Using Sunria Arenga Sugar, this delicious pudding is also healthier for you.

Quantity and Ingredients:
- 200 g Rainforest Rice
- 1 mango, diced to cubes
- 300 g of water
- 300 g of milk
1/2 tsp of cinnamon
1/2 tsp of vanilla extract
1 lemongrass, bruised and knotted
1 tbsp of butter
75 g of Sunria Arenga Sugar
salt, to taste
- mint leaves, to garnish
- Saute butter with 1/3 of mango, lemongrass, and cinnamon, to infuse the flavors. When mango is soft and mushy, add rice and water, then stir until rice is translucent.
- Add milk to the rice, reduce to a simmer, and cover 20 minutes, until liquid is almost absorbed. Stir in Sunria Arenga Sugar, salt and vanilla extract then cover for another 5 minutes.
- Put rice pudding into a dessert glass, top with diced mango, and garnish with a mint leaf in the center.
